,One-pot meals are the perfect solution to dinner on busy nights. Fortunately this meal is high in protein, fibre, contains minimal ingredients and can be prepared in less than 30 minutes.
One Pot Beans, Kale and Sausage
Serves 4
4 sausage of your choice (or a meat substitute)
1 onion, sliced
2 cloves garlic, minced
1 can white kidney beans, drained and rinsed
1 can diced tomatoes
1 tsp Italian seasoning
1 tsp red pepper flakes, optional
1 bunch of kale, washed and chopped
Salt and pepper to taste
Directions:
- If using a leaner meat, heat a small amount of oil in the pot. Cook the sausage in the pot. Once it is browned and cooked all the way through remove from the pan.
- Add onions to the preheated pan and cook until translucent (~4 minutes). Add in garlic and cook until aromatic (~1 minute).
- Add in drained beans, diced tomatoes, seasonings, salt and pepper. Add back in the sausage and cook until all warmed through.
- Add in the chopped kale, stir and cook for a couple of minutes until kale wilts then enjoy!
